Lemon Shortbread Cookies

- 1/2 cup butter (softened)
- 65g granulated sugar
- zest of 1 medium lemon
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract
- 180g all purpose flour
- 1/4 tsp salt
Directions
- Cream together butter, granulated sugar and lemon zest
- Mix in lemon juice and vanilla extract until fully combined
- Add flour and salt and mix until just combined
- Flatten dough into a disk, wrap and chill in the freezer for 15-30 minutes or until slightly firm
- Roll dough between two sheets of parchment paper until 1/4 in. thick, cut into 2 in. squares or use a 2 in. diameter cookie cutter
- Place on baking sheet 2 in. apart and bake at 325ºF for 14-16 minutes or until lightly browned on the edges
Notes
- I love these cookies!
- Bake them slightly longer for melt-in-your-mouth texture
