Lemon Shortbread Cookies

Ingredients

  • 1/2 cup butter (softened)
  • 65g granulated sugar
  • zest of 1 medium lemon

  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract

  • 180g all purpose flour
  • 1/4 tsp salt

Directions

  1. Cream together butter, granulated sugar and lemon zest
  2. Mix in lemon juice and vanilla extract until fully combined
  3. Add flour and salt and mix until just combined
  4. Flatten dough into a disk, wrap and chill in the freezer for 15-30 minutes or until slightly firm
  5. Roll dough between two sheets of parchment paper until 1/4 in. thick, cut into 2 in. squares or use a 2 in. diameter cookie cutter
  6. Place on baking sheet 2 in. apart and bake at 325ºF for 14-16 minutes or until lightly browned on the edges

Notes

  • I love these cookies!
  • Bake them slightly longer for melt-in-your-mouth texture
